By studying the most important factors affecting the consumption demand of red meat in Egypt using current prices during the period (2001-2018), where an inverse relationship was found between the amount of consumer demand and the factors of retail prices for red meat, the average per capita share of poultry, and a direct relationship with the retail price factor of poultry.

The elasticity of each of them was estimated at -0.66, -0.24 and 0.51, respectively, that is, with a decrease in the retail price of red meat, and the average per capita share of poultry at a rate of 10%, the amount of red meat consumption demand increases by 6.6%, 2 4%, and with an increase in the retail price of poultry by 10%, the amount of consumer demand for red meat increases by 5.10%.

Upon studying the description of some variables of the study population, it was found that the average consumption of animal protein per capita represented in red meat, poultry and fish is about 25.82 and 25.10 kg / year, and this less than the average per capita animal protein at the level of the Republic in 2018, which is about 33.5 kg / year, and these indications are indicative of the low average household income in the research community, and thus the low level of economic well-being in the research community.

By studying the most important changes in the quantity of consumer demand for red meat in the total sample, it was found that it is due to factors of the number of family members (X1), family cash income (X2), the price of red meat (X3), the level of education of the head of the household (X6) and fixed income for the head of the household (X7), and the rest of the changes are due to other factors not measured by the study, indications of the parameters of the function for the factors explained with the economic logic, where positive relationship was found between the amount of consumer demand and the factors of each number of family members, cash income, fixed income of the head of the family, and an inverse relationship with the price of red meat and the level of education of the head of the family, the elasticity of each of them was estimated at 0.54, 1,08, -0,52, -0,14, 0,19, i.e.

by increasing the number of family members, cash income for the family and fixed income for the head of the family at a rate of 10% for the family’s consumption of red meat increases by 5,40%, 10,80%, and 1.9%, respectively, and by decreasing the price of red meat and the level of education of the head of the household by 10%, the amount of consumer demand increases by 5,20%, 1, 4%.
