Nutrition is a vital biological need for humans, and it is an indication of the perculiarity of a particular social group, as well as anexpression of identity par excellence.

The article monitors the diversity of the food heritage in the high atlas mountains in Morocco, and shows the role that a group of influences can play in shaping a specific food pattern that in turn contributes to creating an economic dynamic.

With proposals to be valued and promoted, at the time we conclude that this legacy plays a major role in pushing the development wheel forward by employing it as an economic resource, especially in tourism activity.
