This research aims to titrate the total phenols in mate tea and rosemary, because phenols have significant health benefits, due to their antioxidant capacity by inhibiting the free radicals that cause many diseases.

study of the change in the concentration of total phenols according to the form in which the mixture of mate tea is filled commercially (rough or smooth leaves).

and study the effect of grinding and exposing the rough leaves to the sun on the concentration of total phenols.

also study the effect of changing climatic and geographical conditions on the concentration of total phenols in the rosemary, where samples were taken from different sources.

the aim of the study was to measure the antioxidant capacity of phenols of both mate tea and rosemary, and its association with the change in the concentration of total phenols in the two plants.

in addition, separate some phenols, in each type of plant, by high performance liquid chromatography.
