The current study is designed to determine the content of some medical plants of nitrate and nitrite, because of their harmful effects on the consumer.

Their acute toxicity manifested by methemoglobinemia, chronic toxicity of carcinogenicity and mutagenicity due to the nitrite ion association with secondary amines and the formation of nitrosamines.

340 samples of artificial and natural sources were studied, where a determination were made for their content of nitrate and nitrite using diazotization by sulfanilamide +N- naphtyl ethylenediamine dihydrochloride (NED).

In order to compare the contents of both types of nitrate and nitrite samples and determine the effect of their growing conditions on their accumulation.

The study showed that the concentration of nitrate and the nitrite in a drenched of naturally grown plants was lower than in cultivated plants.

It also showed that the way the plants were cultivated (packaging without packaging) did not affect the extraction process.
