في هذه الدراسة تمت دراسة الخصائص الفيزيوكيميائية لثمار صنفين من البلوط (calliprinos Quercus ithaburensis and Quercus) التي تنمو في ظروف حوض البحر المتوسط.
و قد بينت النتائج المتعلقة بالخصائص الفيزيائية كأبعاد الثمار و الوزن و أجزاء الثمار تباينا معنويا (P ≤ 0.05) حيث كانت هذه الخصائص للصنف (Q.
ithaburensis) أكبر من نظيرتها للصنف (Q.
ithaburensis).
أما نتائج التحليل الكيميائي لأجزاء الثمار المختلفة فقد بينت أنها غنية بالكربوهيدرات (41.52-78.83 %) و الألياف (13.11-51.76 %)، و احتوت على نسبة معتدلة من البروتينات (2.08-4.94 %) و الدهون (0.76-3.08 %) و كذلك الرماد (1.78-3.21 %).
و قد تبين التحليل الكيميائي للمعادن اختلافات معنوية لتراكيز العناصر المعدنية المختلفة، حيث تراوح تركيز الصوديوم بين 141.17-278.17، و البوتاسيوم بين 75.98-148.81.
أما الفسفور فكان تركيزه يتراوح بين 21.4-80.80 ملغم / 100 غم.
أما نتائج التركيب الكيميائي لأجزاء ثمار البلوط فقد أظهرت اختلافات إحصائية معنوية بين الصنفين بتراكيز الكربوهيدرات، و الألياف، و الصوديوم، و البوتاسيوم و الفوسفور.
و بينت هذه الدراسة أن ثمار البلوط غنية ببعض المغذيات (الكربوهيدرات، الألياف، الصوديوم، البوتاسيوم و الفوسفور) و يمكن أن تستعمل كمكونات بديلة للأغذية أو لتغذية الثروة الحيوانية.
Abstract EN
This study investigated the physicochemical properties of acorns of two oak species (Quercus ithaburensis and Quercus calliprinos) growing under Mediterranean conditions.
The results showed that physical dimensions and weight of acorns and acorn parts were significantly (p ≤ 0.05) larger for Q.
ithaburensis than Q.
calliprinos.
Chemical analysis showed that various acorn parts were rich in carbohydrates (41.52 to 78.83 %) and fiber (13.11 to 51.76 %), and moderate amounts of protein (2.08 to 4.94 %), fat (0.76 to 3.08 %) and ash (1.78 to 3.21%).
Mineral analysis showed that Na ranged between 141.17 and 278.17, K between 75.98 and 148.81 and P between 21.40 and 80.80 mg / 100 g.
The composition of acorn parts showed significant differences between the two species in carbohydrates, fiber, Na, K and P.
This study showed that oak acorns are rich in some nutrients (carbohydrates, fiber, Na, K and P) and could be used as alternative ingredients of food products or livestock feed
