بالرغم من أن لحوم الماشية من أهم مصادر البروتين الحيواني و ذلك لكثرة استخدامها من قبل الإنسان.
و لكن لسوء الحظ هناك انتشار واسع لطفيل الساركوسست في لحوم تلك الحيوانات.
الهدف الرئيسي من هذا البحث هو معرفة نسبة الإصابة بطفيل الساركوسست في مجاز و محافظة الإسكندرية و مدى تأثيرها على جودة اللحوم المصابة.
و لذلك أجريت تلك الدراسة على عدد 172 من الماشية مختلفة العمر و الجنس لمدة 6 شهور من المجازر المختلفة بمحافظة الإسكندرية.
و قد وجد أن نسبة الإصابة بطفيل الساركوسست في لحوم الماشية 12، 40 (لعدد 69 حيوان مصاب) و قد وجدت الإصابة عالية 36.4 % في المريء و أقل نسبة إصابة في القلب 13 %.
و من التحليل الكيميائي للحوم تلك الحيوانات وجد زيادة ملحوظة في نسبة الرطوبة و الأس الهيدروجيني مع نقص ملحوظ في نسبة البروتين و الدهون.
لذلك فإن اللحوم المصابة بطفيل الساركوسست تؤدي إلى تغيرات كثيرة في مكوناتها مما يؤدي إلى التقليل من جودة تلك اللحوم.
Abstract EN
The prevalence of grossly apparent Sarcocystes and its relation to the analytic of infected meat was investigated in Alexandria abattoirs through a period of six month.
A total of 172 native bread cattle were used for these studied.

12 of cattle under investigation were infected with Sarcocysts Fusiformis.
The incidence of different organs was highest in the esophagus (36.
4 %) however the lowest rate was reported in the heart (13.

Infection with Sarcocysts Fusiformis lead to an increase in the moisture percent and pH value and a decrease in both protein and fat percentages, such effect seriously lower the meat quality.
