Abstract EN

This study dealt with olive production and processing in Jerusalem District during the Mamluk Era.

Olive trees formed one of the important pillars of the agricultural production during that era.

This study is divided into three parts.

The First Part is about olive trees and the areas where they are planted in Jerusalem District; those areas stretched from Jerusalem to the districts of Nablus, Hebron and Ramla.

The Second Part discussed the technique of oil production and manufacturing, especially soap manufacturing and trading.

The Third Part discussed the prices, taxes and the factors which affected the production.

In this study, the researcher depended on the documentary references, stone manuscripts and field visits, in addition to contemporary historical references about the events of that era.
