The Quality Management (QMS) Applications in olive oil industry comprises many phases that include olive fruits extraction, processing, packaging, and distribution to consumers.

This research shades the light on the olive oil industry Quality Management (QMS) Applications process and its phases prevalent in Algeria and Tunisia.

we have adopted A quantitative approach using a conjoint analysis method.

We collected data via a face-to-face questionnaire in Algeria and Tunisia.

At total, 168 between Farmer, Olive wine press owner, Consumer, Vendors and Others.

The research identifies important stages with respect to olive oil Quality Management (QMS) Applications process; these are the quality of olive fruits and oil, organizing the olive farming systems and throw light on the necessity of consumer's, farmers and various parties awareness regarding understanding differences in the variety of olive oils.

The study likely to help practitioners, researchers, academicians, and managers to get an overview of using multi-criteria decision methods for improving Quality Management (QMS) Application process of the olive industry particularly in Algeria
