Comparative biochemical and microbiological studies of camels, cows and mature mothers milk

A total of 60 milk samples collected from healthy camels, cows and mature mother’s milk were used in this study.

Camels and cow’s milk samples were taken during mid-lactation period while mature mother’s milk samples were taken 4-6 weeks after delivery.

The samples were analyzed chemically for total solid, fat, crotein, some trace elements and microbiologically for S.

aureus, E.

coli and Salmonellae.

The results indicated that total solid content of camels milk ranged from 10.3 to 14.5, cow’s milk from 9 to 10.5 and mother’s milk from 8 to 10.9% ; fat in camels milk ranged from 2.9 to 5.7 ; cow’s milk from 3.2 to 4.9 and mother’s milk from 2.6 to 3.7%.

While protein content ranged from 2.4 to 3.7 ; 3.1 to 4.6 and 1.5 to 2.0% of camels, cows and mother’s milk respectively.

Results declared that camel’s milk showed higher copper 0.122 + 0.02 lron, 0.213+0.02 zinc, 0.55+0.09 and Manganese, 0.014+0.006 mg / 100g milk than cows and mother’s milk samples.

Microbiologically, camel’s milk showed lower incidences of S.

aureus and E.

coli than others milk while all milk samples.

Were free of salmonellae.
