Fourteen bacterial isolates belong to Serratia were isolated from different sources.

All these (14) isolates were identified according to morphological and biochemical characteristics, and confirmed by API 20E system.

The isolates were screened for their ability to produce bioemulsifier depending on the surface tension measurement (mN/m), E24% and other tests for cell-free broth after cultivation in mineral salts medium supplemented with olive oil as a sole carbon source.

Serratia marcescens (S10) isolated from insects was the best bioemulsifier producers.

The optimum conditions for bioemulsifier production from S.

marcescens (S10) were determined: mineral salts medium containing sesame oil was the best as a carbon source, ammonium sulphate was used as nitrogen source with pH (8) at (37)Cº for (9) days.

The bioemulsuifier was extracted by organic solvent (chloroformmethanol and diethylether) and the components of bioemulsifier were detected by TLC (Thin layer chromatography) and HPLC (High performance liquid chromatography) analysis which demonstrated that the bioemulsifier is containing lipid, 17.62% carbohydrate and 2.97% protein.

The bioemulsifier characterization was determined; the results showed that the bioemulsifier is active in a wide range of pHs, thermostable at (70Cº) and active in different salt concentrations (3% to 20%).

The antimicrobial activity (antibacterial and antifungal) of bioemulsifier was applied against some microorganisms, the bioemulsifier reduced the growth of bacteria (E.coli , Lesteria , Salmonella , Klebsiella and Staphylococcus aureus ) and inhibited the growth of fungi (Candida albicans, Aspergillus niger and Geotricum).
