From a hygienic point of view, the microbiological value of pollen is the main quality criterion.
It is then necessary to control the microbial load, in particular the absence of pathogenic and fungal germs.
The microbiological quality of the pollen produced by beekeepers and marketed in Algeria is the objective of this study.
Microbiological analyzes were carried out on eight sample types of pollen from different regions harvested by the bee.
The results obtained showed concentrations of total coliforms which ranged between 08 and 300.103 UFC / g and those of fecal coliforms were absent.
The total mesophilic aerobic organisms were found at a concentration between 01 and 420.103 UFC / g.
Yeasts and molds represent between 15 and 280.103 UFC / g.
The total absence of salmonella and staphylococcus was noted in all the samples analyzed.
The results obtained showed a great variation in the microbiological quality between the samples.
The quality of most samples is acceptable except for two samples where the results exceeded the standards (Samples 1 and 5).
الملخص FRE
D’un point de vue hygiénique, la valeur microbiologique du pollen est le principal critère de qualité.
Il est alors nécessaire de contrôler sa charge microbienne et en particulier l’absence des germes pathogènes et fongiques.
Pour ce faire, des analyses microbiologiques ont été effectuées sur huit types d’échantillons du pollen de différentes régions.
Les résultats obtenus ont montrés une grande variation dans la qualité microbiologique entre les échantillons.
En effet, les concentrations en coliformes totaux qui oscillent entre 08 et 300.103 UFC/g, les germes aérobies mésophiles totaux sont présents à une concentration entre 01 et 420.103 UFC/g, les levures et les moisissures sont estimées entre 15 et 280 .103 UFC/g.
On note par ailleurs, l’absence totale de coliformes fécaux, des salmonelles et de staphylococcus dans l’ensemble des échantillons analysés.
La qualité de la plupart des échantillons est acceptable sauf pour deux échantillons où les résultats obtenus dépassent les normes
