The main objective of this study is to throw the light on the incidence, isolation and identification of Salmonellae from roast beef and luncheon products in order to insure safety of these products for human health.

One hundred random samples of roast beef and luncheon (50 of each) were randomly collected from different markets at Kafr -El-sheikh governorate, Egypt.

The samples were examined for isolation and identification of Salmonella Spp.The obtained results revealed that 5(10%) and 8(16%) samples were positive for Salmonella in roast beef and luncheon respectively.

After serological identification, salmonella serovars were S.

typhimurium , S.

enteritidis and S.

haifa in roast beef while S.

typhimurium , S.

enteritidis , S.virchow ,S.

heidelberg and S.

chester in luncheon.

These results showed that roast beef and luncheon might represent a source for salmonella as a food borne disease for human being.
