Hygienic quality evaluation of farm and individual raw cow's milk at Kafr-El-Sheikh Governorate

The study was based on collecting 100 raw milk samples from different dairy farms and individual milk samples (50 samples of each) at Kafr- Elsheikh Governorate.

The pH value and Methylene blue reduction test (MBRT) were determined in addition to microbiological examination of milk (total bacterial count, total psychrotrophic count and coliforms count).

The pH value of the examined farm and individual milk samples were 6.22 ± 0.03 and 6.18 ± 0.04, respectively.

While the results of MBRT were 66, 26 and 8% of the examined farm milk samples were good, fair and bad, respectively.

And 20, 30, 30 and 20% of the examined individual milk samples were good, fair, bad and very bad, respectively.

The mean values of TBC in the examined farm and individual milk samples were 4.7×104 ± 1.1×104 CFU/ml and 3.8×106±2.6×106CFU/ml, total psychrotrophic count were 5.6×104 ± 5.4× 104CFU/ml and 8.9 ×103 ± 4.7 ×103CFU/ml, coliforms count were1× 104 ±0.46 ×104 MPN/ml and 4.9× 105 ± 2.8 ×105 MPN/ml, respectively.
