The results of the current study showed that the caper plant contains active compounds such as phenols and flavonoids.

Caper gel exhibited the highest antioxidant activity about 92.

31 % when used at concentration 100 %, when was comparable to that shown by the industrial antioxidant Butylated Hydroxy Toluene (BHT), which reached to 93.

41%.

The results also indicated that the alcohol extract of the caper gel was able to sweep the hydrogen peroxide amounted to 81.

05 % compared to that shown by the industrial antioxidant and without significant differences.

It also showed a reduction of 2.

25 % which was not significantly different from standard ascorbic antioxidant which had the highest average of 2.
