360241 تم في هذا البحث إجراء نمذجة عددية ثنائه الأبعاد لانتقال الحرارة و الرطوبة خلال عملية تجفيف جسم اسطواني رطب.

و قد تم اعتبار الانتقال المتزامن للحرارة و الرطوبة خلال عملية التجفيف، حيث يتم خلالها تبخير الرطوبة بوساطة مجفف (الهواء مثلا) خلال مروره على الجسم، و قد تم إجراء عملية النمذجة العددية باستخدام طريقة الفروق المحددة، كما تم تحديد التوزيع الحراري و الرطوبي داخل الجسم الأسطواني (التمر مثلا) باستخدام نموذج الحاسب الآلي. و قد تمت مقارنة هذا النموذج بنتائج معملية منشورة عن بروكلي أسطواني، و كانت النتائج متقاربة بشكل كبير.

Abstract EN

This paper deals with the numerical modeling of two-dimensional heat and moisture transfer during drying of a cylindrical moist object.

Drying is considered to be a process of simultaneous heat and moisture transfer whereby moisture is vaporized by means of a drying fluid (e.g.

air), as it passes over a moist object.

Numerical modeling of two-dimensional heat and moisture transfer during drying of a cylindrical object is carried out using an explicit finite-difference approach.

Temperature and moisture distributions inside a cylindrical product (i.e.

a date) are determined using the developed computer code.

Moreover, the results predicted from the present model are compared with the experimental data available in the literature for cylindrical broccoli and a considerably high agreement is found.
