يعتبر اللبن و منتجاته من أكثر الأغذية استهلاكا نظرا لقيمته الغذائية العالية إلا انه قد يكون مسببا لكثير من الأمراض عن طريق التلوث بالميكروبات أثناء الإنتاج و النقل و التداول و الاستهلاك.
و من هذه الميكروبات اليرسينيا انتيروكوليتيكا و التي تعتبر احد الميكروبات المحبة للبرودة و التي تلعب دورا خطيرا في التأثير على الصحة العامة للإنسان لما قد يسببه من حالات تسمم غذائي مصحوبة باضطرابات معدية و معوية حادة و مؤمنة.
لذا أجريت هذه الدراسة لفحص عدد 70 عينة من اللبن الخام و المبستر (35 لكل منها) و التي تم جمعها من مصادر مختلقة بمحافظة أسيوط في صيف عام 2012.
و قد أسفرت النتائج عن تواجد ميكروب اليرسينيا انتيروكوليتيكا بنسبة 20 % (7 عترات) في عينات اللبن الخام و بنسبة 5.7 % (2عترة) في عينات اللبن المبستر.
هذا و قد تم اختبار ضراوة عترات اليرسينيا انتيروكوليتيكا المعزولة من اللبن الخام و المبستر من خلال قدرتها على إحداث التهاب في العين اليمني لحيوان خنزير غينيا (Guniea pig) و قد اتضح أن كل العثرات المعزولة و عددها 9 عترات عديمة الضراوة.
و قد تم مناقشة الأهمية الصحية للميكروبات المعزولة و الاشتراطات الصحية أثناء إنتاج و تصنيع و تداول الألبان الخام و المبسترة و كذلك الاقتراحات الواجب اتباعها لتحسين جودة اللبن للحفاظ على صحة المستهلك.
Abstract EN
Seventy random samples of raw and pasteurized milk (35 of each) were collected from different localities in Assiut City, Egypt, and examined bacteriologically for the presence of Yersinia enterocolitica.
The samples were collected in summer months, 2012.
The results revealed that Yersinia enterocolitica was detected in 20.0 and 5.7 % of the examined marketable raw and pasteurized milk samples, respectively.
The virulence of the recovered isolates of Yersinia enterocolitica was tested by using virulence test (Guinea pig conjunctivitis) and revealed that non of the isolated strains harbouring virulence determinants (Avirulent strain).
