The aim of this study is to trace food's systems in Sudan during the Ottoman period (1821-1881) and the Mahdia (1881-1889).
the study explains the types of food that were prevalent during that particular era and how these types were prepared and transmitted among the general population of large cities during Ottoman ruleThe study, furthermore, examines the extent of the influence of the Ottoman Empire on food and food culture.
The study seeks to address one of the most important topics in the Sudanese social history under the scarcity of specialized studies and researches in this field.
The Ottomans sought to transfer the Sudanese table from the traditional system food to an open one.
Ottoman rule introduced many types of food that contributed to the diversification of the Sudanese table while retaining traditional food in the remote areas of the capital and the cities of the tide.
The study followed the historical descriptive analytical method in order to reach the results.
