Through this article, we will describe the beginnings of the cultivation and manufacture of the vine in the ancient world from the historical and archaeological sources provided by Latin and Greek agricultural engineers and archaeologists, and we will highlight the one of the main problems for researchers, which is knowing how to identify olive oil and wine extraction presses.
