Abstract EN

In this study, two analytical methods were used to determinate the phytic acid, the volumetric method using the complexometric and the colorimetric method using the spectrophotometer at Xmax 500 nm.

By adjusting the concentrations of the solutions used (phytic acid 50% w/w, sodium edetate solution 0.1M, iron chloride solution 0.02 M).

Then determining the linearity, accuracy, precision, limit of detection and limit of quantitation of each.

In comparison, the colorimetric method was chosen for its accuracy, repeatability, sensitivity and speed of performance.

After that it was applied to samples of wheat, chickpeas and peanuts, after extraction the phytic acid by hydrochloric acid 0.6N.

The results ranged between 12.51 - 14.48 mg/g in wheat, 6.46 - 10.79 mg/g in chickpeas and 13.54 - 20.6 mg/g in peanuts.
