تم دراسة تأثير تقطيع الجزر بأشكال مختلفة (جزر صحيح, و مقطع طوليا و مشرشر, و شرائح مستديرة) و تأثير المعاملة الحرارية الرطبة (الـسلق Blanching) لمدد مختلفة على الخواص الكيميائية و الطبيعية و الحسية و على التركيب المجهري للجزر الأصفر, و تم أيضا تقييم الخواص الحسية و الفيزيوكيميائية للعصير الناتج من بين عينات الجزر تحت الدراسة. أوضحت النتائج أن عينات الجزر المقطع طوليا و مشرشر و المسلوق (Blanched) في ماء مغلي لمدة 10 دقائق بدون استخدام ضغط أو باستخدام ضغط لمدة دقيقة واحدة قد لاقت قبولا، كما أظهرت تحسن فى اللون و الخواص الغذائية.
كما أظهرت نتائج المجهر الإلكتروني حدوث تغيرات واضحة فى مكونات الخلية لعينتي الجزر الصحيح و الجزر المقطع طوليا و مشرشر و مسلوق فى ماء مغلى لمدة 10 دقائق, بينما أحدث السلق (Blanching) تحت ضغط لمدة دقيقة واحدة تهشما واضحا لأنسجة هاتين العينتين وتم انفصال الـ Middle Lamella فى عينة الجزر المقطع شرائح.
و أدت المعاملة الحرارية إلى صعوبة الاستخلاص و بالتالي كان العصير المستخلص أقل. تم اختيار عينتي الجزر المقطع طوليا و مشرشر و المعامل حراريا في ماء مغلي لمدة 10 دقائق بدون استخدام ضغط أو لمدة دقيقة واحدة تحت ضغط لإنتاج عصير الجزر.
أظهرت نتائج التقييم الحسي تفضيل المحكمين لعينتي العصير المختبر و حصول اللون على درجة مرتفعة مقارنة بعينة عصير الجزر الطازج.
أدت عملية الـسلق (Blanching) للجزر قبل إنتاج العصير إلى زيادة نسبة الاحتفاظ بالكاروتين في عينات العصير المنتجة عن نسبتها في عينة عصير الجزر الطازج.
و لوحظ زيادة طفيفة في محتوى السكر الكلي لعينتي العصير الناتج من الجزر المسلوق مقارنة بعينة العصير الناتج من الجزر الطازج.
بينما اتضح أن البروتين و الدهن في عينتي العصير الناتج من الجزر المسلوق أقل من عينة عصير الجزر الطازج.
Abstract EN
The effects of some different cutting shapes (whole, serrated and sliced) and moist-heat treatments (blanching in boiling water with or without applying pressure for different time intervals) on physical, chemical, sensory properties and microscopic structure of carrot (Daucus carrot L) were investigated.
Physico-chemical and sensory properties of carrot juice produced from selected blanched carrot in-between the investigated samples were evaluated.
The serrated carrot samples blanched in boiling water for 10 min or for 1 min under pressure seemed to improved color, nutritional properties, and had higher over-all acceptability scores.
Scanning electron microscopy showed that blanching of whole and serrated carrot samples in boiling water for 10 min.
caused some visible changes in the cell (dense and swollen walls).
Blanching of whole and serrated carrot samples for 1 min.
under pressure resulted in more tissue disruption and caused cell separation in the middle lamella of the sliced carrot samples.
Heat treatment made extraction more difficult and consequently less juice was extracted.
Juice produced from selected serrated carrots blanched in boiling water with or without applied pressure had higher visual color scores.
Blanching of carrot samples before juicing process could protect carotene against loss since their retention % were higher than those retained in fresh carrot juice samples.
There was slight increase in total sugar contents of the tested carrot juice samples (samples C and D(.
However, blanched carrot juice samples were lower in protein and lipid than those of fresh carrots.
