تم تجميع خمسون عينة من لبن النعاج و الماعز الخام (25 خمسة و عشرون عينة من كل نوع) من مزرعة ليندنهوف –مدينة شتوتجارت– ألمانيا.
و فحصها بكتريولوجيا بمعهد الصحة و البيئة بجامعة هوهنهايم لمعرفة تواجد العدد الكلي للميكروبات و الميكروبات المحبة للبرودة بالإضافة إلى دراسة تواجد ميكروبات التسمم الغذائي بها.
و قد أوضحت الدراسة أن متوسط العدد الكلي للميكروبات في العينات المفحوصة كان 1,9 × 310 و 1,4 × 310 / مللي على التوالي.
كما أمكن عزل الميكروبات المحبة للبرودة من جميع العينات (100 %) بمتوسط 7,8 × 10 و 6,3 × 10 / مللي على التوالي.
قد أمكن عزل كلا من ميكروبات المكورات العنقودية و المكورات السبحية المعوية و ميكروب الإيشيريشيا كولاي بنسبة (52 و 84 %) و (44 و 36 %) و (36 و 44 %) و كان متوسط العدد الكلي للمعزولات هو (7,2 × 10 و 6,1 × 10) و (2,5 × 10 و 2,4 × 10) و (3 × 10 و 2,1 × 10) لكل مللي من عينات لبن النعاج و الماعز على التوالي و بتصنيف المعزولات أمكن الحصول على عترات المكور العنقودي الذهبي و المكور العنقودي من نوع إبيدرميدس و المكور السبحي المعوي من نوع فيكالس و من نوع فيشيوم و ميكروب الإيشيريشيا كولاي بنسبة (24,3 و 19,2 %) و (16,2 و 32,7 %) و (10,8 و 13,5 %) و (19,0 و 17,3 %) و (29,7 و 17,3 %) من إجمالي المعزولات على التوالي.
في حين أن ميكروبات كلوسترديم بيرفرنجينز و كامبيلو باكتر جيجيناي و كوريني بكتريم بوفيز السالمونيلا لم يتمكن من عزلها من أي من العينات المفحوصة.
و كذلك تمت مناقشة الأهمية الصحية للمعزولات و كيفية تطبيق الأسس العلمية لمنع انتقال هذه الميكروبات للإنسان عن طريق تناول لبن النعاج و الماعز للحفاظ على صحة المستهلك.
Abstract EN
Fifty raw ewe’s and goat’s milk samples (25 of each) were examined for total viable, psychotropic count and the presence of foodborne pathogenic microorganisms.
The obtained results revealed that the mean total bacterial counts / ml were 1.9 x103 and 1.4 x 103 in the examined samples, respectively.
Psychotropic bacteria could be detected in all examined samples (100.0 %) with mean values of 7.8 x 10 and 6.3 x 10 / mL, respectively.
Staphylococci, Enterococci, and E.
coli, were detected in (52.0 & 84.0 %), (44.0 & 36.0 %) and (36.0 & 44.0 %) of the examined samples with mean values / ml of (7.2 x10 & 6.1 x10), (2.5 x 10 & 2.4 x 10) and (3.0 x 10 & 2.1 x 10), respectively.
The predominant isolated bacterial strains were Staphylococcus aurous, Staphylococcus epidermis's, Enterococcus facials, Enterococcus fascism and E.
coli, at percentages of (24.3 & 19.2 %), (16.2 & 32.7 %), (10.8 & 13.5 %), (19.0 & 17.3 %) and (29.7 & 17.3 %) of total isolates, respectively.
On the other hand, Clostridium perfringens, Campylobacter jejune, Corynebacterium bovid and Salmonellae failed to be detected in all examined samples.
The sanitary and public health importance of these organisms as well as preventive measures to improve the quality of milk and safeguard the consumers from infection were discussed.
