يعد تبنى استخدام برامج تنظيف و تطهير متميزة و غير ضارة من أهم التحديات الملحة و الهامة التي تواجه المنظمات الصحية، هذا بالإضافة إلى حرص و تشمع الكثير من المنظمات سواء الحكومية أو غير الحكومية على ضرورة استخدام الحجات الخاصة بالتنظيف و التطهير التي تتميز بكونها صديقة للبيئة.
و جدير بالذم أن المستوى الصحي للعاملين و الممارسات الصحية لتداول الغذاء الأمن، تعد جميعا من العناصر الهامة في إعداد و حفظ و تنويع و خدمة الغذاء.
و التي تعد جميعها ممارسات ذات أهمية كبرى، خاصة فيما يتعلق ببرامج العمد بالمطابخ الرئيسية بفنادق الخمس نجوم.
مما دفع مؤسسات الضيافة جميعا و منها الفنادق إلى زيادة اهتمامها بمحاولة التوصل إلى إجراءات التنظيف و التطهير الملاسة و التي تتناسب مع كونها صديقة للبيئة.
و مع انتشار و تعالى النداءات باستخدام الخامات الخضراء صديقة البيئة في الآونة الأخيرة فان استخدام الميكروفيبر في التنظيف بدلا من المنظفات الكيماوية المعتادة يعد هو الخيار الحديث لاستخدام مثل هذه الخامات.
و انطلاقا مما سبق فان يمكن توضيح أهداف الدراسة على النحو التالي : • تحديد المستوى الصحي و معرفة الطرق المستخدمة في تنظيف الأسطح الملامسة للأغذية عند تجهيزها و إعدادها بالطبخ الرئيسي بفنادق الخمس نجوم.
• دراسة التأثير المثبط للنمو الميكروبيولوجي طويل المدى عند استخدام الهيكروفيبر في تنظيف أسطح تحضير الأغذية المستخدمة بصورة يومية في المطبخ الرئيسي لفنادق الخمسة نجوم.
• دراسة القيمة الصحية لليكروفيبر.
و قد تم جمع البيانات اللازمة للدراسة باستخدام طريفة تحليل البيانات الثانوية و المقابلات الشخصية مع العاملين من مسئولى التنظيف المختصين بمطابخ الفنادق محل العينة و ذلك للوقوف على الإجراءات المتبعة و طرق و أنواع المنظفات المستخدمة بها.
هذا بالإضافة إلى انه قد تم اخذ مسحات بكتينة من الأسطح المختلفة الملامسة للأغذية عند تجهيزها أو إعدادها فبل و بعد التنظيف باستخدام الهيكروفيبر فقط و ذلك بالمطابخ الرئيسية بفنادق الخمس نجوم في مدينة الإسكندرية و التي تمثل عينة البحث.
و قد أظهرت النتائج نقصا معنويا في عدد الوحدات البكتيرية المتكونة حيث انه قد انخفضت الوحدات اليكتيبية من ٥٦٧ وحدة بتنيمة قبل تنظيف الأسطح الأستيل ستيل إلى ٣٣ وحدة بكتيرية بعد التنظيف و من ٨٥٠٠ وحدة بكتينة إلى ٢٦٧ وحدة بكتيرية على الأسطح البرستيكية و انخفضت من ٣٣٣ وحدة بكتينة إلى ٠ ٠ ١ وحدة بعد تنظيف الأسطح الرخامية.
و على ذلك فان الدراسة توصى بإمكانية استخدام الهيكروفيبر كأحد وسائل التنظيف و التطهير صديقة البينة بمطابخ فنادق الخمس نجوم.
Abstract EN
Since the success of hospitality industry in general, and the food service premises in particular heavily depends on the good hygiene and food safety practices and well informed staff about the preparation, storage, distribution and service of food.
this study was under taken to identify how food preparation contacts surfaces hygiene and cleanliness in the main kitchen are conducted, to observe safety aspects of microfiber and to conduct a study on the inhibition growth of the microbiological particles when using microfiber to clean contact surfaces that are in daily use in the main kitchen of five star hotels in Alexandria city, Egypt.
An interview was used to gather data and determine the steward chefs' respondents' perceptions of the subject under investigation.
In addition, bacteria samples were taken from different types of flat counter tops of preparing food area in the kitchen before and after cleaning.
the results of the microbiological samples is given in cfu / cm2 (colony forming units per square centimeter).the results revealed that there is a significant decrease in the cfu from 567 cfu before cleaning the steel counter top in the kitchen to 33 cfu after cleaning, from 8500 cfu before cleaning the uneven plastic countertop in the kitchen to 267 cfu after cleaning and from 333cfu before cleaning the marble counter top to 100 cfu after cleaning.
The statistical software package sas was used for the analysis of data.
