تم في هذه الدراسة الفحص البكتريولوجي للحوم عدد 250 عينة جمبري موزعة كالآتي : 50 من كل من الجمبري الطازج، و المبرد بالثلج (صغير و متوسط و كبير الحجم) و القديم حسب المواصفات القياسية المصرية للجمبري و قد روعي في جمع العينات أن تتم بصورة عشوائية و تمثل الأنواع المختلفة من الجمبري المعتداول في أسواق السمك بمحافظة بورسعيد.
و قد تبين من الفحص أن القيمة المتوسطة للمستعمرة الهوائية الكلية في عينات الجمبري الطازج، و المبرد بالثلج صغير و متوسط و كبير الحجم و القديم كانت 2 × 102 و 5.3 × 106 و 4.2 × 104 و 5.3 × 106 مستعمرة لكل جرام على التوالي.
و كانت البكتيريا الهوائية المعزولة الأكثر تكرار من عينات الجمبري المفحوصة هي أجناس أيروموناس (48 .4 %)، الأسينيتوباكتر (97 .2 %)، العصويات (37 .25 %) الفلافوباكتريوم (98 .5%) السيودوموناس (83.32 %)، الميكروكوكوس (45..1 %)، الستافيلوكوكوس (94.11 %) و الستريبتوكوكوس (98.5 %) بينما كانت القيمة المتوسطة للمستعمرات الهوائية المحبة للبرودة في لحوم ذات العينات هي 1.3 × 103 و 3.2 × 106 و 6.2 × 105 و 3.1 × 103 و 2.2 × 106 مستعمرة لكل جرام على التوالي.
هذا و كانت القيمة المتوسطة للعدد الكلي للميكروب الستافيلوكوكوس في نفس العينات هي 0.92 و 2 × 102 و 28.1 و 8.1 × 103 مستعمرة لكل جرام على التوالي.
و لم يتمكن من عزل جرثموة الكوليفورم من عينات الجمبري الطازجة أو المبردة بالثلج متوسطة و كبيرة الحجم بينما تم عزلها من عينات الجمبري المبرة بالثلج صغيرة الحجم و القديمة في الأسواق بنسبة 13 (26 %) و 50 (100 %) على التوالي.
و لم يتمكن من عزل جرثومة السلامونيلا من جميع العينات تحت الدراسة.
هذا و قد تم مناقشة النتائج و إعطاء بعض الاقتراحات و التوصيات لتطيلان و ترفعان من جودة الجمبري المتداول في أسواق السمك بمحافظة بورسعيد.
Abstract EN
A total of 250 shrimp samples ; 50 each of fresh, iced small, middle, large and incipient stale shrimp were randomly collected from fish markets at Port-Said governorate to be examined for bacteriological quality.
The mean values of the total aerobic colony count in fresh, iced small, middle, large and incipient stale shrimp samples were 2x102, 5.3x106, 4.2x104, 3x102 and 5.3x106 CFU / g respectively.
The most isolated aerobic bacteria from the examined samples were Aeromonas spp.
(4.48%), Acinetobacter spp.
(2.97%), Bacillus spp.
(25.37%), Flavobacterium spp.
(5.98%), Pseudomonas spp.
(32.83%), Micrococcus spp.
(10.45%), Staphylococcus spp.
(11.94%), and Streptococcus spp.
(5.98%).
The mean values of the total psychrophilic count for fresh, iced small, middle, large and stale shrimp samples were 1.3x103, 3.2x106, 6.2x105, 3.1x103 and 2.2x106 CFU / g respectively.
The mean values of staphylococcal count for fresh, iced small, middle, large and incipient stale shrimp samples were 0.92, 2.1x103, 2x102, 28.1 and 8.1x103 CFU / g respectively.
The coli form could not be isolated from the fresh, iced middle and large shrimp samples.
However, it could be isolated from iced, small and incipient stale shrimp samples by 13 (26%) and 50 (100%) with mean values of 1.2x102 and 2.8x102 respectively.
None of the fresh samples recorded positive for the incidence of Vibrio.
Salmonella could not be isolated from all 250 examined shrimp samples.
Suggestions and recommendations for prolong and rise the shrimp quality in Port-Said fish markets were given.
