أجريت هذه الدراسة على 50 عينة من الدواجن المشوية على الفحم المصري المعدة للاستهلاك الآدمي من محلات بيع الدواجن في محافظة كفر الشيخ حيث تم عمل الفحص البكترولوجي لهذه العينات و قد أوضحت نتائج الفحص أن متوسط العدد الكلى للميكروبات الهوائية و الميكروبات العصوية المعوية و المكور العنقودي الذهبي هي كالتالي 4.6 × 104، 1.1 × 103، 3.2 × 103 على التوالي لكل ميكروب على حدة و تم تقدير النسبة المئوية للميكروبات المعوية بنسبة 64 % و المكور العنقودي الذهبي بنسبة 4 % و تم عزل ميكروب السالمونيلا بنسبة (8 %) من عينات الدواجن المشوية و تم تصنيفه إلى سالمونيلا تيفسميرم بنسبة (6 %) و سالمونيلا انتريدس بنسبة (2 %) و قد تم مناقشة الأهمية الصحية للميكروبات لا ممرضة التي تم عزلها و مدى علاقتها بالصحة العامة حفاظا على صحة المستهلك.
Abstract EN
A total of fifty grilled chicken samples were randomly collected under aseptic condition from different restaurants in Kafr El-Sheikh Province.
All samples were subjected to bacteriological examination to determine the incidence of some food pathogenic bacteria.
Results revealed that the mean value of total bacterial count was 6.4 x 104 in grilled chicken samples and the mean total enterobacteriaceae counts were 1.1 x 103 and 3.2 x 103 for Staph.
auers counts.
Four serotypes of Salmonella organism were isolated from grilled chicken and identified as S.
typhimerium (6%) and S.
enteritidis (2%).
The public health significance of isolated bacterial was discussed and suggestions for improving sanitary condition of grilled chicken.
