Lactobacillus pfontarum 0L9 strain previously isolated from naturally fermented Algerian green olives was inhibitory against six strains of Erwinia chrysanthetni.
The antimicrobial agent exhibited properties similar to those of bacteriocins of lactic acid bacteria.
It was bactericidal, sensitive to proteases (trypsin, a-chymotrypsin and pronase E), heat stable (121°C for 15 min.), and maintained full stability at pH 3 to 8.
This is the first report dealing with tjhe inhibition of £ chrysanthetni by lactio acid bacteria.
