تم في هذه الدراسة جمع و فحص عدد 231 عينة من لحوم دجاج اللحم و منتجاتها المجمعة عشوائيا من محلات السوبر ماركت الواقعة بمدينة الإسماعيلية بواقع عدد 44 عينة من ذبائح دجاج اللحم و عدد 44 عينة كبد دجاج و 44 عينة بورجر الدجاج و ذلك لاستبيان مدى تلوث لحوم تلك الأغذية بجرثومة الاركوباكتر.
و قد أسفرت هذه الدراسة عن تواجد ميكروب الاركوباكتر بنسبة 72،7 % (44 / 32)، 66،7 % (48 / 32) و 100 % (40 / 40) في عينات ذبائح الدجاج، كبد و بورجر الدجاج على التوالي- و قد أمكن عزل ميكروب اركوباكتر بتزليري بنسبة 37،5 %، 37،5 % و 60 % من عينات ذبائح الدجاج و اكباد و بورجر الدجاج على التوالي و قد أمكن عزل ميكروب اركوباكتر كريروفيلس بنسبة 37،5 %، 12،5 % و 20 % من العينات و قد تم عزل ميكروب اركوباكتر سكيررويي بنسبة 25 %، 50 % و 20 % من عينات الدجاج هذا و قد تم دراسة أهمية تواجد مثل هذه النوعية من الجراثيم في لحوم الدجاج و منتجاتها و كذلك إعطاء بعض التوصيات لمنع تلوث لحوم الدجاج و أكبادها و بورجر الدجاج بجرثومة الاركوباكتر لتتجنب ما قد تسببه من مخاطر صحي على المستهلكين.
Abstract EN
A total of 132 samples of chicken carcass and chicken products were randomly collected from different localities in Ismailia city for microbiological evaluation.
Arcobacter spp.
was isolated from 72.7 % (32 / 44), 66.7 % (32 / 48) and 100 % (40 / 40) of the chicken carcass, liver and burger samples respectively.
The frequency of A.
butzleri, A.
cryaerophilus and A.
skirrowii were 37.5 % (12 / 32), 37.5 % (12 / 32) and 25 % (08 / 32) of the chicken carcass, liver and burger samples respectively.
A.
butzleri was recovered from 37.5 % (12 / 32) of liver samples and 12.5 % (04 / 32) for A.
cryaerophilus, while the higher percentage was related to A.
skirrowii which isolated from 50% (16 / 32) of the liver samples.
A.
butzleri were detected in 60 % (24 / 40), A.
cryaerophilus 20 % (08 / 40) and A.
skirrowii 20 % (08 / 40) examined burger samples.
The highest incidence of Arcobacter species in the examined chicken and their products is considered as a serious public health hazard to human health that required attention from the concerned authority to control the sanitary of chicken meat production at Ismailia city.
