تم تقدير و تقييم الصفات الوظيفية للألياف الغذائية المستخلصة من بعض الخضروات مثل الكرفس و البقدونس و الفجل الأحمر و الباقلاء الخضراء و البزاليا الخضراء و بقايا الطماطة بالطريقة الإنزيمية.
تم حساب ريع الاستخلاص و تم تقدير القدرة على الاحتفاظ بالماء و الزيت و الكثافة الكتلية.
بينت النتائج أن كمية الألياف الناتجة مقبولة من كل المصادر و أن الأعلى ريع تم استحصاله هو 24.4 و 25.89 و 27.61 % لكل من الباقلاء و البازلاء الخضراء و قشور الطماطة على التوالي.
تراوحت الكثافة الكتلية بين 0.300 غم / مل لألياف قشور الطماطة و بين 0.667 غم / مل لألياف الفجل الأسود مقارنة ب 0.500 غم / مل للسلسلوز التجاري.
تراوحت قيم القدرة على الاحتفاظ بالماء بين أعلى قيمة و هي 9.277 و 8.503 غم / غم على سرعة طرد مركزي هو g 1350 و 2670 g على التوالي لألياف قشور الطماطة إلى أقل قيم هي 5.207 و 4.771 غم / غم على سرعة طرد مركزي هو g 1350 و g 2670 على التوالي لألياف البزاليا الخضراء مقارنة ب 4.107 و 3.367 غم / غم نفس سرعة الطرد المركزي أعلاه للسليلوز التجاري.
و أن أقل قدرة على الاحتفاظ بالزيت على سرعة طرد مركزي g 1350 و 2670 g هي 5.910 و 3.809 غم / غم على التوالي لألياف البزاليا الخضراء و أعلى قيم هي 6,527 و 5,593 غم / غم على التوالي لألياف البقدونس مقارنة ب 5.910 و 4.290 غم / غم على التوالي للسليلوز التجاري.
أمكن الاستنتاج أن هذه الخضروات هي مصادر جيدة للألياف الغذائية و تمتلك صفت وظيفية جيدة و من المحتمل مفيدة صحيا مقارنة بالسليلوز التجاري.
Abstract EN
Functional properties of dietary fibers extracted from some vegetables namely; celery, parsley, red and dark radish, green beans and peas and tomato peels using enzymatic method were investigated.
Dietary fibers were investigated for yield extraction and water holding capacity (WHC), oil holding capacity (OHC) and bulk density (BD).
Results show that the extraction process gave acceptable yield of fibers from all vegetables and the highest yields were for green beans and peas and tomato peels (24.04, 25.89 and 27.61%, respectively).
Bulk densities values were ranged between 0.300 g/ml for dietary fibers from tomato peels to 0.667 g/ml for dark radish compared with 0.500 g/ml for commercial cellulose.
WHC of extracted fibers were ranged between the highest values of 9.277 and 8.503 g/g at respective 1350Xg and 2670Xg centrifugation speeds for tomato peels fibers and the lowest values of 5.207 g/g and 4.771 g/g at respective 1350Xg and 2670Xg centrifugation speeds for fibers of green peas compared with values of 4.107 and 3.367 g/g at respective above centrifugation speeds for commercial cellulose.
The lowest OHC at 1350Xg and 2670Xg centrifugation speeds were 5.910 and 3.809 g/g, respectively for green peas and the highest values were 6.527 and 5.593 g/g, respectively for parsley compared with 5.910 and 4.290 g/g, respectively for commercial cellulose.
It was concluded that these vegetable were good sources of dietary fibers with good functional properties of endurable healthy purpose.
