إن الألبان و منتجاتها تمثل أهمية خاصة كغذاء كامل يتناسب مع المراحل العمرية للصغار و الكبار، لذا كان من الضروري الاهتمام بتحسين الحالة الميكروبيولوجية و فترة الصلاحية للبن سواء الخام و المبستر و الزبادي البلدي.
و كما نعلم جيداً أهمية عسل النحل المذكور في القرآن – كشفاء للناس، فرصدنا في هذا البحث تأثير عسل الشمر على فترة الصلاحية من خلال تأثيره على الحالة الميكروبيولوجية لكل من اللبن الخام و المبستر و الزبادي البلدي.
كما أظهرت النتائج أن إضافة العسل في تركيز 1، 5، 10 % يؤثر على البكتيريا العنقودية و العد الكلي البكتيري أثناء الحفظ عند درجة حرارة 4 درجة سيليزية و خصوصاً تركيز عسل الشمر عند 10 %.
و مع ذلك فإنه لم يؤثر بشكل كبير في الوقت المحدد للعمر الافتراضي للعينات و على عدد الخمائر و العفن.
و بالمثل، العسل يؤثر على درجة الحموضة و مستويات حمض اللاكتيك في العينات.
و يعد تركيز عسل الشمر عند 1 % و 5 % الأكثر قبولاً لدى المستهلك.
و على الرغم من هذه النتائج، يوصى بإضافة العسل إلى اللبن الخام والمبستر و الزبادي البلدي لأن العسل هو المحلي الطبيعي الذي يمتلك مجموعة واسعة من الخصائص الغذائية المفيدة.
Abstract EN
The primary purpose of this research was to monitor the influence of fennel honey addition to raw, pasteurized milk and Zabadi baladi on survival of the microbial flora during refrigerated storage in order to expend their viability date.
Results showed that addition of honey at concentrations of 0, 1%, 5% and 10 % affects the Staph.
organisms count and total colony count during storage at 4 °C in all trails with specific effect of honey at 10 %.
However, it did not significantly influence on shelf life time of samples and on the yeast and mold count.
Similarly, honey affects on pH and lactic acid levels of samples.
Raw, pasteurized milk and Zabadi baladi prepared with 1% and 5 % Fennel honey were acceptable to the consumer and considered the most preferable type.
Despite these findings, enrichment of raw, pasteurized milk and Zabadi baladi with honey is recommended because honey is a natural sweetener that possesses a wide range of beneficial nutritional properties.
