Food industries represent an important feature in all : affluent, deprived or de-veloped and underdeveloped s©cieties .

This paper analyses the different factors eon-troling the growth of these industries in the Gaza Strip of Palestine.

The agricultural production, in the area of fruits and vegitables, permits a considerable surplus that could be converted to industrial products.

Despite its diminutive area and the lack of natural resources and sources of energy , the Gaza Strip has succeeded through har-nessing its human potentials, in establishing a growing food industry.

The fact that Gaza Strip is still under Israeli occupation has had negative repurcussions.

Most of the existing few plants could be categorized as home-industries since they harbour less than ten labourers each.

Such household endeavours represent over 95 % of the total number of industrial food plants in the sector.

It is, however, difficult to envis-age a bright future for the food industries in the Gaza Strip as long as it remains un-der occupation, and as long as it lacks the much needed prerequisites of water and energy.
