Mycotoxins are secondary metabolites produced by molds belonging mainly to the genus Aspergillus, Penicillium, Fusarium and Alternaria.
They are likely to be present in a wide range of plant foods or animal environment favorable to their development while causing a loss of nutritional and commercial value.
Their development and toxigenicity are influenced by several intrinsic and extrinsic parameters such as the fungal species, the temperature and the nature of the substrate.
Aflatoxins produced by Aspergilli section Flavi retain worldwide attention.
They can induce toxic effects in several human and animal organs, and the International Agency for Research on Cancer (IARC) classified aflatoxins as carcinogenic molecules.
Mycotoxins therefore present a public health risk

Les mycotoxines sont des métabolites secondaires produits par des moisissures appartenant principalement au genre Aspergillus, Penicillium, Fusarium et Alternaria.
Elles sont susceptibles d’être présentes dans une large gamme d’aliments végétaux ou animaux, milieu favorable à leur développement tout en provoquant une perte de leur valeur nutritive et commerciale.
Leur élaboration et leur toxinogénicité sont influencées par plusieurs paramètres intrinsèques et extrinsèques comme l’espèce fongique, la température et la nature du substrat.
Les aflatoxines produites par les Aspergilli section Flavi retiennent dans le monde une attention particulière.
Elles peuvent induire un effet toxique au niveau de plusieurs organes humains et animaux, et l’Agence Internationale de Recherche sur le Cancer (IARC) a classé les aflatoxines parmi les cancérogènes.
Les mycotoxines présentent donc un risque de santé publique
