Zakah calculation : how do I calculate my Zakah on property ?

Salams I would like to know how and at what rate do I calculate my Zakat if I am a jewelry seller (Gold) and I want to calculate my Zakat will it be on value of the stock I have presently or on the profit I realize on its sales over one year. Secondly I have many Landed properties which I earn rent on them will my Zakat be on the rent I collected or the values of the properties
