Food safety regulations must be followed by each resort hotel to ensure that customers are consuming food that is prepared in safe conditions.
Many hotels practice such intense food safety regulations tlian even cleaning and maintenance.
This study aims to measure the awareness and knowledge of the food and beverages’ employees in the resort hotels regarding the food safety rules and procedures and the actual application of these rules and procedures during tiie daily operating in order to reach the best recommendations to improving the performance and reducing risk in the food and beverage sector in these properties.
In order to achieve this aim, two sources of evidence were used.
Questionnaires were conducted with food and beverage employees to identify the extent of their awareness and knowledge regarding food safety.
Meanwhile, personal observation checklists were used to ensure that food safety procedures are correctly applied.
Also, the investigated resort hotels are limited to four and five star categories in Sharm El Sheikli.
