Abstract EN

Four samples of Syrian honey from different floral origins, namely: citrus Honey , mountain honey , eucalyptus honey and multi flowers honey (Source: Syrian coast), were studied.

Physical parameters, such as moisture and total ash content, pH, color intensity, were determined.

In addition, the quantitative content of carbohydrates (fructose and glucose, sucrose and maltose) using liquid chromatography high performance HPLC.

Total polyphenoles Content of phenolics in honey samples was estimated using a modified Folin–Ciocalteu method, then DPPH (2, 2-diphenyl-1-picrylhydrazyl) radical scavenging activity of honey samples was evaluated to compare the characteristics of anti-oxidants between the types of honey studied.

Finally, the test results were compared with the standard specification Syrian and the FAO and the Codex.

Positive correlations were found between ash contents and color intensity with polyphenoles and DPPH values.

Thus, the present study revealed that Syrian honey is a good source of antioxidants
