تعد الاغشية الصالحة للأكل او القابلة للتحلل وسائل مناسبة لزيادة فترة خزن المواد الغذائية و تحسين نوعيتها دون الاسهام في التلوث البيئي، و يمكن تحضير الاغشية القابلة للأكل من البروتينات و الدهون و السكريات المتعددة و تعد الاغشية البروتينية اكثرها اهمية.
بروتينات الكولاجين، الجيلاتين، بروتينات الذرة (الزين)، كلوتين الحنطة، بروتينات فول الصويا، الكازين، بروتينات البقوليات هي البروتينات الشائعة في انتاج الاغشية البروتينية القابلة للأكل ولها القدرة على احتجاز الغازات كما هو الحال في الاغشية المصنعة من السكريات المتعددة و تمتلك الخصائص الميكانيكية للأفلام المصنعة على البروتين على خواص أكثر من تلك المصنعة من السكريات المتعددة و الأغشية المصنعة من الدهون وذلك لاحتواء البروتين (على أساس 20 مونومرات مختلفة) و التي تمتلك مجموعة كبيرة من الخصائص الوظيفية، و بالرغم من قلة نفاذية بخار الماء و انخفاض قوة الشد مقارنة بالبوليمرات المستعملة في التغليف لذا استخدمت العديد من التحويرات لتحسين الخواص الوظيفية للغشاء عن طريق الطرق الفيزيائية و الكيميائية و الانزيمية و الربط مع المواد الغير محبة للماء و بعض البوليمرات

The edible or bio-degradable films are materials which compose of suitable means toincrease the storage time of food and improve their condition externally conductiveto environmental contamination.
The protein, lipid and polysaccharide are materials can form the edible film.
Wereproteins based edible films are considered mainly appropriate in food coating.
Collagen, gelatin films, corn zein, wheat gluten, soy protein, casein and mung beanprotein are the most types films used in coating food.
The protein edible films haveremarkable gas block features equalled to films made from polysaccharides andlipids.
These films have mechanical properties which make it best thanpolysaccharide and fat based film Although the water vapor permeability is low andthe tensile strength is less than the polymers used in the packaging, manymodifications have been used to improve the functional properties of the film viaphysical, chemical and enzymatic methods and bonding with hydrophobic materialsand some polymers
