Abstract EN

Defatted sesame meals were extracted for ethanol soluble sugars and the effects of different conditions for extraction were compared for the composition and yield of the extracts.

Xylooligosaccharides (XOS) were generated from the hemicellulose fraction (following deproteinization) using endo-xylanase from Bacillus subtilis.

The condition which produced the highest yield for total soluble sugars was 40% ethanol at 60 0 C for 30 minutes for de-hulled (A) and hulled (B) sesame meal samples.

Ultrasonication treatment of the samples had no significant benefit over water-bath.

Sugar composition analysis of the samples showed the presence of glucose, arabinose, galactose and xylose with trace amounts of rhamnose.

Prebiotic activity scores for L.

casie (ATCC 393) were 0.87, 0.45, 0.13, on inulin, dehulled (A) and hulled (B) sesame meals, respectively.

While B.

bifidum (ATCC 29521) showed the following scores 0.77, -1.0, -0.43 on inulin, dehulled (A) and hulled (B) sesame meals, respectively.

Dehulled sesame meal is a potential prebiotic source due to its content of xylooligosaccharides.
