تم في هذه الدراسة تصنيع الزبادي بأربع أنواع النوع الأول الزبادي العادي (TY) تحتوي على بادئا الزبادي فقط و النوع الثاني (BY) و هو زبادي مضاف إليه بادئا الزبادي + البيفيدو بيفيديم و النوع الثالث (LY) و هو زبادي مضاف إليه بادئا الزبادي + بكتريا البيفيدو لاكتس و النوع الرابع (MY) و هو زبادي مضاف إليه بادئا الزبادي + بكتريا البيفيدو بيفيدم + بكتريا البيفيدو لاكتس.
و تم إضافة عدد معلوم من البكتريا الممرضة من المكور العنقودي الذهبي و بكتريا الايشيريشيا كولاي وبكتريا السالمونيلا تيفيميوريم ثم تم فحص أنواع الزبادي عند تكوين الخثرة و عند اليوم الثالث و الخامس و السابع و الرابع عشر لقياس نسبة الحموضة و قياس العدد الكلي لبكتيريا المكور العنقودي الذهبي و بكتريا الايشيريشيا كولاي و بكتريا السالمونيلا تيفيميوريم و قد أظهرت النتائج ارتفاعا في نسبة الحموضة و تناقصا في عدد البكتريا المضافة علي مدار فترة التخزين.
Abstract EN
The antimicrobial activity of bifidobacterium bifidum and lactis against some pathogenic bacteria such as staphylococcus aureus, E.
coli and salmonella typhimurium was investigated during the manufacture and preservation of four types of yoghurt ; traditional yoghurt (TY) (starter culture), bifidobifidium yoghurt (BY) (starter culture + bifidobacterium bifidum), bifidolactis yoghurt (LY) (starter culture + bifidobacterium lactis) and mixed yoghurt (MY) (starter culture + bifidobacterium bifidum + lactis).
yoghurt samples were inoculated with 104 CFU / G staphylococcus aureus, E.
coli and salmonella typhimurium and preserved for 14 days at 4 ± 1ºC.
the inoculated bacterial count and the titratable acidity were determined in the prepared yoghurt samples at zero, 3rd, 5th, 7th and 14th day of storage.
the obtained results revealed elevation in the titratable acidity and noticeable inhibition in the count of the inoculated bacteria during the storage period of prepared yoghurt samples at 4 ± 1ºC.
