استخدمت في هذه الدراسة ثلاثة أصناف من الذرة الرفيعة هي الحمراء و البيضاء و الشهلة حيث نقعت ثم لمدة خمسة أيام وشملت الدراسة التغير في التركيب الكيميائي و السكريات الذائبة الكلية و محتوى النشا و الأحماض الأمينية.
أظهرت الدراسة أن التنقيع لمدة ليلة واحدة عند درجة حرارة الغرفة لم يحدث تغير في نسبة البروتين و الدهن والرماد و الكربوهيدرات الكلية في الأصناف الثلاثة عدا نقصان طفيف في السكريات الكلية الذائبة و محتوى النشا.
أدى التنبيت لمدة خمسة أيام من ناحية أخرى إلي زيادة معنوية في نسبة البروتين و الرماد مع نقصان مواز في نسبة الدهن و الكربوهيدرات الكلية، كما أدى أيضا إلي زيادة معنوية في السكريات الذائبة الكلية و السكريات المختزلة و غير المختزلة و ذلك مع تطابق في نقصان محتوى النشا.
أظهر تحليل الأحماض الأمينية نقصانًا طفيفًا في معظم الأحماض الأمينية الضرورية عدا الحامض الأميني الليسين الذي زاد بصورة واضحة أثناء التنبيت.
Abstract EN
Three sorghum varieties Hamra, Shahla and Baida were soaked and germinated for 5 days.
Changes in chemical composition, total soluble sugars, starch content and amino acid composition were studied.
Investigation showed that over-night soaking at room temperature was found to cause no change in protein, fat, ash, and total carbohydrates of the three cultivars except for slight decreases in soluble sugars and starch., On the other hand, germination was found to cause a significant increase in protein and ash contents of sorghum with a parallel decrease in fat and total carbohydrates.
Germination significantly increased the total soluble sugars, reducing and non-reducing sugar contents of sorghum varieties that coincide with decrease in starch content.
Amino acid analysis revealed slight decrease in most of essential amino acids with an exception of lysine, which was markedly increased during germination.
