أجريت هذه الدراسة لمعرفة مدى تلوث الوجبات السريعة (ساندويتشات) المجهزة للأكل من منتجات اللحوم (حواوشي، كبدة، كفتة و شاورمة) و المجمعة من محلات الوجبات السريعة بمدينة أسيوط بميكروب المكور العنقودي الذهبي و ميكروب المكور العنقودي الذهبي المقاوم للميثيسيللين و كذلك للوقوف على معرفة مدى إفراز العترات المعزولة للسموم المعوية المسببة للتسمم الغذائي.
و لقد شملت الدراسة إجراء الفحص البكتريولوجي لعدد 80 عينة حيث أفشت إلى وجود الميكروب المكور العنقودي الذهبي بنسب 25 %، 45 %، 40 % و 30 % في كل من الحواوش و الكبدة و الكفتة و الشاورمة على التوالي.
و قد كانت متوسطات عدد الميكروب الكلي هو 2,80 × 410، 7,20 × 410 و 8,98 × 310 / جم في العينات المفحوصة على التوالي.
بينما تم عزل الميكروب المكور العنقودي الذهبي المقاوم للميثيسيللين من جميع أنواع العينات المفحوصة بنسب 15، 40، 35 و 25 % على الترتيب.
و تم تصنيف العترات المعزولة لمدى إفرازها للسموم و لوحظ أن نوع السم C الأكثر وجودا في العترات المعزولة.
و لقد نوقشت الأهمية الصحية للميكروب و سمومه و وضعت التوصيات اللازمة لسلامة المستهلك و المنتج.
Abstract EN
A total of 80 random samples of ready-to-eat meat sandwiches represented as 20 each of hawawshy, liver, kofta and shawarma that retailed from various fast food restaurants in Assiut city were examined for contamination with S.
aurous and mythic ill in-resistant S.
aurous in association with its enterotoxigenicity.
S.
aurous strains were recovered from 25, 45, 40 and 30% of the examined hawawshy, liver, kofta and shawarma samples, respectively.
While, the average counts were 2.75 xio3, 2.80 x io4, 7.20 x lO4 and 8.98 x io3 cfu / g of the examined samples, respectively.
Whereas, MRSA strains were isolated from 15, 40, 35 and 25% of the same examined samples, respectively.
Eight out of twelve strains of MRSA were isolated from liver (4 strains), shawarma (3 strains) and only one strain from kofta proved to be enter toxigenic, while the strains isolated from hawawshy failed to produce any enterotoxins.
All the 8 strains produced enterotoxins C, while, 3 strains isolated from shawarma produced CD, ACD and ABCDE enterotoxins, in addition the only strain isolated from kofta can produce CE enterotoxins.
The results showed that enterotoxin C was the most frequently in all the examined ready-to-eat sandwiches, indicating that S.
aurous had a potential public health significance in fast food.
