Abstract EN

Heavy metals, sodium chloride, nitrites and aflatoxins were estimated in forty samples of frozen and canned tuna fish which were collected from Cairo markets.

Concentrations of lead (Pb), cadmium (Cd), mercury (Hg), nickel (Ni) and cobalt (Co) were measured in all collected samples.

The results shows that the estimated levels of Pb, Cd, and nitrites in canned and frozen tuna were above the permissible limits, while the recorded Hg levels were within limits only in both canned and frozen tuna.

All examined samples were free from aflatoxins.
