تم تحضير منتج اللانشون المعلب من اللحم البقري و لحم الدجاج بتوليفتين تحتوي الأولى على مستوى قليل (حوالي %9) و تحتوي الثانية على مستوى عالٍ (حوالي 16%) من الدهن، و تم معاملة التوليفتين بدرجات حرارة مختلفة (º105 و 115 º و 121 º م).
أظهرت نتائج التحليل التقريبي أن مجموعة منتج اللانشون المعلب ذات المستوى القليل من الدهن لها مستوى عالي معنويا (p< 0.05) من الرطوبة و مستوى أقل من البروتين مقارنة بالمنتجات عالية الدهن، بينما لم يكن هناك فروقات معنوية لقيم درجة الحموضة (الرقم الهيدروجيني) التي تراوحت فيما بين 6.59 و 6.61.
لم يكن هناك فرق واضح بين المنتجات ذات المحتوى العالي و تلك ذات المحتوى القليل من الدهن من حيث قيم التزنخ التأكسدي، و وجد هناك تأثير قليل لمحتوى الدهن و المعاملة الحرارية في تركيب البروتين.
لم يظهر أي أحياء دقيقة ذات حيوية بعد معاملة العلب حراريًا و تخزينها على حرارة 30 º م لمدة 14 يومًا.
كانت خلطة المنتج ذات المحتوى القليل من الدهن و التي عوملت على حرارة 105 º م كانت الأفضل من حيث صفاتها الحسية، كما كانت سليمة من الناحية الميكربيولوجية و ثابت في ظروف التخزين العادية.
Abstract EN
Canned luncheon meat made from beef and poultry was prepared with either a low (about 9%) or high (about 16 %) fat content and subjected to heating at 105, 115 or 121oC, which were designed to give an F value of about 4.3.After heat processing and storage of cans at 30oC for 14 days, no viable microbes were recovered from any of treatment products.
Proximate chemical composition showed that low-fat group had a significantly higher (p < 0.05) moisture content and a lower protein content than the corresponding high-fat products, while pH values ranged from 6.59 to 6.61 and were not significantly different for the treatments.
There was no clear distinction between low- and high-fat products with regard to oxidative rancidity, little effect of either fat content or treatment temperature on protein denaturation.
Low-fat formulation, heated at 105oC, was the best in relation to sensory characteristics, microbiologically safe and shelf-stable.
