English Abstract

The present investigation is concerned with the establishment of optic life' tori conditions of food grade gelatin from the tannery bovine hide wastes.

:The production process was performed by cutting the hide wastes into "all pieces (1-2) cm2, and washed thoroughly with water to the remove the Hart and materials.

The washed pieces were placed in the liming tank containing (TO %) calcium hydroxide solution with stirring for five weeks.

After washing with water to remove the lime, the collagen is naturalized to pH (7) with hydrochloric acid.

Four extraction stages using hot water were carried out to find-optimum conditions.

The gelatin solutions were filtered, deionized and concentrated between (20-35) %wt by vacuum : evaporator.

Gelatin solution was dried by two types of dryers (tray dryer and spray dryer).

Box-Wilson method was.

Adopted to- obtain any existed relationship between the three variables (temperature, time and pH); and gelatin yield in the first stage of extraction and two variables (temperature and time) and the gelatin year in the other third stages of extraction process.

The experimental data collected by this method were successfully fitted to-second other polynomial mathematical models for all stages.

The operating conditions of the multistage extraction were studied in detail by forming a mathematical model for each stage.

The most favorable operating conditions for the multistage extraction of gelatin were as follows :- The First Stage :- Temperature = 63.48 °C, Time - 5 hr., pH - 7.02 The Second Stage.

Temperature = 74.11 °C, Time = 3.72 hr., pH = 7.02 the third Stage.

Temperature = 83.86°C, Time = 3.69 hr., pH = 7.02 the fourth Stage.

Temperature = 98.14 °C, Time = 3.83 hr., pH = 7.02.

The percentage yield of gelatin was 55 %, under the previous condition.
