تم في هذه الدراسة تجميع و فحص عدد 861 عينة من عينات اللحوم و منتجاتها المتداولة في السوبر ماركت المختلفة بمحافظة الإسماعيلية لاحتمالية تواجد ميكروب الاركوباكتر فيها.
و تمثلت العينات في عدد 44 عينة كل من اللحم المفري و الكبد البقري و عدد 44 عينة كل من الهامبرجر و السجق الشرقي.
و أظهرت النتائج تواجد ميكروب الاراكوباكتر بنسبة 90،9 % (40 / 44)، 27،3 % (12 / 44)، 60 % (24 / 40) و 80 % (32 / 40) في عينات مفروم اللحم و لكبد و البورجر و السجق على التوالي.
و بذلك يكون نسبة الإصابة في اللحوم و منتجاتها 64،3 % (108 / 168).
وأكدت النتائج تلوث منتجات اللحوم بعترة الاركوباكتر باتزليري، كريروفيلوس وسكيررويي بنسب 50 % (20 / 40)، 40 % (16 / 40) و 10 % (4 / 40) في عينات مفروم اللحم على التوالي.
بينما وجد انتشار عترة الاركوباكتر باتزليري و كريروفيلوس و سكيررويي في عينات الكبد بنسبة 100 % (12 / 12) صفر % و صفر % على التوالي.
و كانت نسبة للاركوباكتر باتزليري 50 % (12 / 24) و اركوباكتر كريروفيلوس 33،3 % (8 / 24) والاركوباكتر سكيررويي 16،7 % (4 / 24) في بورجر اللحم.
و كانت عترات الاركوباكتر باتزليري، كريروفيلوس في عينات السجق الشرقي البقري بالنسب الآتية 50 % (16 / 40)، 50 % (16 / 40) على التوالي بينما لم تمكن الدراسة من عزل عترة الأركوباكتر سكيررويي في عينات السجق الشرقي.
و تعتبر الدراسة أول دراسة تم فيها عزل عترة الاراكوباكتر من اللحوم المتداولة في أسواق محافظة الإسماعيلية و التي من الممكن أن تسبب مخاطر صحية كبيرة علي جموع المستهلكين.
و أكدت الدراسة ضرورة إجراء المزيد من الدراسات لاستبيان مصادر التلوث بهذه الجرا و الطرق المختلفة للسيطرة عليها لتحسين جودة الأغذية المتداولة في الأسواق.
Abstract EN
A total of 168 fresh meat and offal samples, each 250 to 500g weight, were collected from different supermarkets in Ismailia city for determination the incidence of Arcobacter species.
The samples represented by minced beef meat (44), liver (44), beef burger (40) and oriental sausage (40).
Arcobacter species could be isolated from 90.9 %, 27.3 %, 60 % and 80 % of the minced beef, liver, beef burger and oriental sausage respectively.

cryaerophilus and A.
skirrowii were detected by 50.0 %, 40 % and 10 % in minced beef samples respectively.

butzleri was recovered from 100 % of liver samples mean while, A.
butzleri, A.
cryaerophilus and A.
skirrowii could be detected with 50 %, 33.3 % and 16.7 % of beef burger samples respectively.

skirrowii could be detected with 50 %, 50 % and 0 % of sausage samples respectively.
Arcobacter species are considered as newly emerging food-borne pathogen in Ismailia governorate, which may cause severs public health hazards to consumers.
Further researches are still need towards the sources of contamination by such pathogens and trials to control them to improve the safety of meat and their products.
