أُجريت هذه الدراسة على 100 عينة من الجبن المصري الطري (50 عينة جبن قريش و 50 عينة جبن ثلاجة) جمعت عشوائياً من مدينة بني سويف و قراها و ذلك لتعيين حالتها البكتريولوجية و معرفة مدى سلامتها و أثرها على صحة المستهلك.
و قد وجد أن متوسط العدد الكلي للميكروبات، الميكروبات المحبة للبرودة، الميكروب القولوني، الميكروب القولوني البرازي و الميكروب العصوي القولوني كما يلي على التوالي : 19,4 * 10 7 ، 1.45*10 7 ، 7.7*10 6، 2.1*10 6، و 2.97*10 4 / جرام من عينات الجبن القريش المفحوصة .
بينما كان متوسط أعداد الميكروبات المحبة للبرودة، الميكروب القولوني و الميكروب القولوني البرازي كما يلي على التوالي : 7.7*10 5، 5.3*10 3 و 6*10 2 / جرام من عينات جبن الثلاجة المفحوصة .
كما أمكن عزل ميكروب الميكروب العصوي القولوني و اليرسينيا انتيروكوليتكا من 56 و 10 %من عينات الجبن القريش و بنسبة 6 و 4 % من عينات جبن الثلاجة المفحوصة على التوالي .
لم يتم عزل ميكروب الكورونوبكتر سكازاكي من أي من عينات الجبن المفحوصة .
كما تم مناقشة الأهمية الصحية و الاقتصادية للميكروبات و كذلك الشروط الصحية الواجب توافرها لتحسين جودة هذا المنتج.
Abstract EN
A total of 100 random of some Egyptian soft cheeses (50 each of karees and tillage cheese) were collected from different farmer's houses and shops in Beni-Suef city and villages around the city.
The mean values of TBC, psychotropic, Total coliforms, faucal coliforms and E.coli counts were 4.19x107,1.45 x 107, 7.7x106, 2.1x106 and 2.97x104 / g of the examined karees cheese samples, respectively.
The mean values of psychotropic, total coliforms and faucal coliforms counts were 7.7 x 105, 5.3 x 103 and 6x102 / g of the examined tillage cheese samples, respectively.
E.coli an Y.enterocolitica organisms were detected in 56 and 10 % of the examined karees cheese samples and in 6 and 4 % of the examined tillage cheese samples, respectively.
None of the examined cheese samples contained C.sakazakii.
The public health significance and suggested control measures were discussed.
