أجريت هذه الدراسة بهدف تطوير حمص صحي و ذلك بعد إضافة سلالات مختارة من بكتيريا المعاونات الحيوية مباشرة إلى الحمص.
و قد تم تطوير الحمص الغني ببكتيريا المعاونات الحيوية و ذلك بعد إضافة 10% من المعاونات الحيوية و المزروعة مسبقا في الوسط الزرعي الذي تم تطويره (HBSM) إلى حمص تمت معاملته حراريا على درجة حرارة 75°م لمدة 5 دقائق و تم حضن الحمص لاهوائيا على درجة حرارة 37°م لمدة 8 ساعات.
ظل تعداد المعاونات الحيوية في الحمص الصحي أكثر من 710 وحدة مكونة للمستعمرات / غم عندما تم حفظه على درجة حرارة 4°م لمدة 24 و 48 و 72 و 96 ساعة.
و لم يكن ثمة فرق في التقييم الحسي بين الحمص الصحي و نظيره الحمص العادي.
Abstract EN
The present study was conducted to develop a probiotic huumus by the incorporation of selected probiotic bacteria directly in conventional hummus, a paste prepared from chickpea (Cicer arietinum L.).
Probiotic hummus was developed by the addition of 10 % of a culture medium based on chickpeas and skim milk (Hummus broth skim milk, HBSM) in which probiotic bacteria had grown to a previously heated hummus at 75ºC / 5 min, followed by anaerobic incubation at 37ºC / 8 h.
Counts of probiotic bacteria in probiotic hummus remained >107 CFU / g when kept at 4 ºC for 24, 48, 72 and 96 h.
Sensory evaluation results showed that probiotic hummus and conventional hummus (control) were acceptable.
