تعد المأكولات البحرية من المصادر الغذائية الهامة نظرا لاحتوائها على نسب عالية من البروتين و الفيتامينات و الدهون و الأملاح وتعتبر لحومها من الأغذية سريعة التلف و الفساد لذلك فإنها من الممكن أن تشكل مصدرا خطرا على صحة المستهلكين خاصة في حالة تلوثها خلال التداول و النقل الخاطئ قبل و بعد تخزينها.
و نظرا لدخول أنواع مستوردة من لحوم شرائح الأسماك و الجمبري بكميات هائلة إلى الأسواق المحلية.
المصرية فكانت الحاجة إلى تقيم الجودة البكتريولوجية لتلك المنتجات لذلك تم تجميع عدد (100) عينة مجمدة بواقع (50) عينة من شرائح الأسماك و عدد (50) عينة من الروبيان المقشر من أسواق مدينة الإسماعيلية لفحصها ميكروبيولوجيا.
و أظهرت النتائج أن العدد الكلي للبكتريا المحبة للبرودة، و لمجموعة الأمعائيات، و العدد الكلي للمكور العنقودي الذهبي، و العدد الكلي للإشريكية القولونية في عينات شرائح السمك هو 2,4 ₓ 510، 2,3 ₓ 510، 2,1 ₓ 510، 3,2 ₓ 210 خلية على التوالي و في عينات الروبيان هو 1,6 ₓ 610، 19 ₓ 310، 3,5 ₓ 610، 1,8 ₓ 210 خلية على التوالي كما أسفرت النتائج عن عدم التمكن من عزل جرثومة السالمونيلا في كل العينات تحت الدراسة هذا و تمت مناقشة النتائج المتحصل عليها و إعطاء التوصيات اللازمة التي من شأنها رفع الجودة البكتريولوجية لتلك المنتجات أثناء التخزين و التداول.
Abstract EN
Seafood during processing is liable to contaminate with various kinds of spoilage microorganisms from different sources.
Therefore a total of 100 frozen fish fillet and shrimp samples were randomly collected from different markets in Ismailia city to determine their bacteriological quality.
The obtained results revealed that, the mean value of total psychrophilic, enterobacteriacae , Staphylococcus aureus and Escherichia coli counts for fish fillets samples were 2.4 x 105, 2.3 x 105, 2.1 x 105 and 3.2 x 10² cfu / g respectively meanwhile for shrimps samples were 1.6 x 10⁶, 19 x 103, 3.5 x 10⁶ and1.8 x 10² cfu / g respectively.
The obtained results were compared with the standard limits set by The Egyptian Organization for Standardization and Quality Control.
The current study confirmed that the spoilage of frozen seafood products during storage may be attributable to high bacterial contamination before and during processing due to in adequate hygienic practices.
These bacteria may remain enzymatically active under storage which leads to shortening their shelf-life of such product.
