Pre-cooked shawirma was processed from beef or legs chicken meat in which was designed to be as investigated shawirma (Is).
Commercial cooked beef and chicken shawirma namely market shawirma (MS) was obtained from the local restaurants.
both of Is and MS were frozen stored at – 180C in which the shelf life was detected and the properties of commodities were compared.
Is samples were of long shelf-life being, 180 days at -180C as compared to 120 days for MS samples.
MS Sandwitch was of high calories and low protein content, the reverse, however, was found for IS sandwitches.
IS samples were highly organoleptically accepted as compared to MS ones.
The ready-to-eat IS samples were recommended for preparing the family fast Sandwiches.
