English Abstract

Fifty samples of beef burger were examined to determine their quality.

The results revealed that the samples had deteriorated sensory attributes, high fat, very low protein and high moisture content, bad cooking characteristics as well as very high bacteriological load and presence of many foreign tissues in the histological analysis
