The cultural conditions for inulinase production from local isolate of Aspergillus niger using solid state fermentation were investigated.

Various fermentation parameters such as carbon sources, nitrogen sources and pH were analyzed.

Among different carbon sources, sucrose resulted in maximum enzyme production where the enzymatic activity reached 11.13 U / g.

The best sucrose concentration was found to be 0.67 g / 100g with enzymatic activity 25.91 U / g.

Peptone was the best nitrogen source for the enzyme production where the enzymatic activity reached 56.98 U / g.

The best concentration of peptone was found to be 1.67 g/100g with enzymatic activity reached 60.03 U / g.

The best pH for inulinase production was 4.5
