Abstract EN

The aim of this work is to isolate and select some lactic acid bacteria (LAB) strains producing bacteriocin against pathogenic bacteria.

A total of 512 LAB isolates isolated from 18 brine samples of fermenting Moroccan green olives, were screened for their bacteriocin production capacity.

The antimicrobial activity was detected by agar diffusion method against Leuconostoc paramesenteroides, Leuconostoc mesenteroides, Lactobacillus brevis, Pediococcus pentosaceus, Listeria monocytogenes, Bacillus cereus, Staphylococcus aureus, and Escherichia coli used as target strains.

The protein nature of the antimicrobial substances was detected by measuring their inhibitory effect after pH neutralisation and enzymes addition (catalase, proteinase-K and trypsin).

The results obtained showed that among 512 LAB isolates, only 3 strains were selected for their bacteriocin production capacity.

The other isolates inhibited the growth of target strains by organic acids production.

The bacteriocin producer strains were identified, using the API 50 galleries, as Lactobacillus brevis (2 strains) and Lactobacillus pentosus (1 strain).

Abstract FRE

L’objectif de ce travail est l’isolement et la sélection de souches de bactéries lactiques (BL) produisant des bactériocines actives contre des souches de bactéries pathogènes.

512 isolats de BL, isolés de 18 échantillons de saumures d’olives vertes en fermentation, ont étécriblés pour leur capacité de production de bactériocines, en utilisant la méthode de diffusion sur milieu gélosé contre des bactéries cibles (Leuconostoc paramesenteroides, Leuconostoc mesenteroides, Lactobacillus brevis, Pediococcus pentosaceus, Listeria monocytogenes, Bacillus cereus, Staphylococcus aureus, et Escherichia coli).

La nature protéique des substances antimicrobiennes a été déterminée par la mesure de leur activité antimicrobienne après la neutralisation du pH des cultures et leur traitement par les enzymes (catalase, proteinase-K and trypsin).

Les résultats obtenus ont montré que parmi les 512 isolats étudiés, seulement 3 souches ont été sélectionnées productrices de bactériocines.

L’effet inhibiteur des autres isolats contre les souches cibles est associé à la production d’acides organiques.

Les souches produisant des bactériocines ont été identifiées par la galerie API50CHL comme Lactobacillus brevis (2 souches) and Lactobacillus pentosus (1 souche).

pentosus T1, connue comme acidifiant fort et ne produisant pas de gaz, peut être utilisée comme ferment dans la fermentation et l’amélioration de la qualité hygiénique des olives fermentées
