Abstract EN

This research was aimed to classificateLactococcus lactis bacteria isolated from white Syrian cheeses and ollected during March 2012 to Marsh 2013 from different areas in Syria.

135isolates of bacterial were isolated from 58 samples of white fresh cheese (40 sample from ewe milk cheese and 18 sample from cow milk cheese), 71 isolates of them were cocci, gram positive, negative catalase, homofermentation.

Those bacterias were identified using API system and PCR technique.

It was found: Lc lactis ssp.

Lactis, Lc lactisssp cremoris, Lc lactis ssp lactis biovar diacetylactis were the predominant.

When some characteristics of isolated strains were studied, It was found that only 17 strains were able to utilize citrates, and all strains werenot able to grow up at 45ºC, while all strains were able to grow up at 6.5% concentration of NaCl.
